The sous chef from the Michelin-starred Allium, at Askham Hall, has taken on a new role as head chef at flagship sister pub The Queen’s Head.
Anthony Amos has worked alongside Allium’s head chef Richard Swale for the past six years and has made the move to the nearby Queen’s Head from today, Monday 3 April.
Anthony has worked in kitchens since he was 13 years old, later studying at Kendal College and refining his skills at a local pub, before landing his first sous chef role at The Pheasant Inn at Bassenthwaite. Other career highlights to date include cooking for the Italian senate.
Under his guidance, the food offering at The Queen’s Head will continue to reflect its status as a quintessential Lake District inn, using produce grown and reared at Askham Hall and the estate farms and kitchen gardens.
Anthony says: “I’m looking forward to getting started at The Queen’s Head and am putting together some enticing new menus with sous chef James Middlemore.
“Together we are channelling our passion for the incredible local produce we have locally and cooking led by the seasons. I also have a love for travel, so expect to see some Asian flavours featuring subtly in the new menu too.”
General manager of The Queen’s Head, Susan Wouters, adds: ‘We are incredibly excited to welcome Anthony to create a new offering and provide our guests with an even greater variety of food to choose from.
“His experience at Askham Hall will certainly bring a new perspective and we are proud to have such amazing talent within our fold, working alongside Lisa Barwise, who heads up our front of house team.
“Looking ahead, The Queen’s Head will retain the warm, cosy feel of a welcoming country pub offering refined, creative and modern food. As well as a new menu, we’ll also be showcasing our award-winning wine list, with wine pairings carefully selected by Askham Hall’s head sommelier and The Queen’s Head team.”
The Queen’s Head kitchen was previously headed up by Gareth Webster, who is moving back to The George and Dragon in Clifton – in preparation for a planned re-opening this summer, following a fire last year.
